About this tradition
Mallorca's greatest fair ('the fair of all fairs'), with medieval-Islamic roots. Every third Thursday of November, over 150,000 visitors fill Inca. Livestock, crafts, local produce, agricultural machinery. The eve is the Dimecres Bo with a fire run. Its cellers (cellar-restaurants) are iconic.
Associated gastronomy
In the cellers: roast suckling pig, frit mallorquí, arròs brut. Artisan cured meats and cheese.
