About this tradition
Mallorca's capital of Sant Antoni, with ties documented since 1365. Bonfires on every corner, ximbombes, satirical songs and demons dancing in the flames. The night of the 16th (la revetla) is the most intense of the Mallorcan winter.
Associated gastronomy
Espinagada: rectangular pie of thin dough filled with s'Albufera eel, chilli and spinach. Also botifarrons, sausages and pork loin grilled at the bonfire.
