About this dish
The island's Denomination of Origin olive oil, made from arbequina, picual and the native mallorquina varieties. The centuries-old olive groves of the Serra de Tramuntana are its standard-bearer. The new-harvest (novell) oil of November is a celebration (Fira de l'Oli de Caimari).
